Blooming Onion (from Healthy Cooking Magazine)
2 large sweet onions
1 Tbsp butter
2 tsp dijon mustard
3 Tbsp dry bread crumbs
1/4 tsp salt
1/4 tsp pepper
sauce:
1/4 cup fat-free sour cream
1/4 cup fat-free mayo
1 1/2 tsp dried minced onion
1/4 tsp garlic powder
1/4 tsp dill weed
1- with a sharp knife slice 1/2 inch off top of onion, peel outside layer off and discard. Cut onion into 16ths stopping 1/2 inch from root end
2- place each onion in heavy duty foil (about 12 inch square) fold foil around onions and seal tightly, place in uncovered baking dish. bake 425 for 20 minutes
3- in a small bowl combine butter and mustard. Open foil, fold foil into a bowl around onions. brush butter mixture over onions, sprinkle with bread crumbs, salt, and pepper
4- Bake 20 minutes longer until crisp-tender
5- combine sauce ingredients, serve with onions
The coconut cream is a little luxury, but gives this soup a wonderful south asian flavour.... yummy! You can add a touch of chili powder if you want to add some kick...

It was fridge cleaning day and we winged (yeah, bad pun) this soup together. It came out so good I both had to save it for myself and share it with you all.
Get creative. I made this up to have a higher fiber appetizer. It would probably be good with spicy pepper added.

This is a fantastic, low fat dish that can be used when dipping veggies or pita. Also great slathered on a tortilla, wrapped up with veggies. Stays good covered in fridge for over a week.

I will be doing another recipe with a totally keto pasta and crumbled feta instead of mozzarella but you can use either cheese!

This is a VERY large-scale recipe (scaleable, but this is the only time I measured), but the salsa is phenomenal!!!
An easy soup to rustle up because you probably have most of the stuff in your pantry. Serve it with a small green salad, and some Portugues or Italian bread. Great on a chilly day...or any day and it's low calorie.
For my slow cooking comfort chili I recommend that you add the chili's and spices to taste, we like spicy, so it's easier for us to add spice & heat without adding to the calories. :) I also find that if you are not a fan of onions, it helps to cook those separately so they break down some and won't be as chunky in the chili later. It's also easy to make it vegetarian by removing the turkey. Makes 21 (1) Cup servings. Enjoy~
I do not like a lot of beans in my chili, but you could add more or different kinds. Also, you could omit the sugar. This is just the way my mom has always made it. I love to put it in the crock pot, it does tend to get spicier the longer it simmers.
