This is the cuban recipe with a twist. I added celery and a plantain for sweetness. The original recipe is only with carrot, potato and 2 oz angel pasta ( I use 1 oz) to reduce carbs. Saffron is optional. Sometimes I add more veggies like spinach, broccoli or kale etc and calculate them separately but they don't add too much calories.

To save time, buy the cabbage pre-chopped from the grocery-store salad bar or get a bag of coleslaw mix (without dressing mixed in, just cabbage and carrots).
Healthy and quick to make, this could be a main dish for lunch or a side dish. I like this with whole wheat crackers, like Ak-Mak. You could also put it in pita with seeded cucumber slices and lettuce. An herbed feta is especially nice in this.
I originally made this as "trail food" while camping, but it works well for a busy, cooking-impaired college student. Make with whole-wheat pasta for extra fiber, but this way is gluten-free.
Combine all ingredients in slow cooker, cover and cook on low for 8-9 hours
This is officially my household's favorite recipe for Pasta e Fagioli. Great all fall and winter, leaving out the beef is just as good!
