cream of broccoli soup substituting pureed tofu for cream

This is using a soup mix and adding leftover sloppy joe meat for protien. Adding etc vegetables. One thing is that you can used canned, frozen or fresh. I cooked this in a crockpot but you could cook on top of the stove.

This recipe was featured in the Summer Issue of my Humana Active Outlook Magazine.. Nice for warm weather, and easy to make.
I did not add any extra dressing or croutons when I made this and it was very good.

this potato salad has a little amount of mayo, just enough to mix!

Although it is best hot out of the skillet, it is also great at room tempature or slightly chilled
