These muffins are filled with apples, carrots, coconut, raisins and nuts. They turned out so well and taste wonderful. A great addition to a morning breakfast buffet.
This is a modification of my first smoothie recipe with input from a nutritionist. Hubby and I are satisfied all morning. Try other frozen fruit for a different flavor.
