Great breakfast muffin...Got the recipe from Fitness magazine May 2010 issue. I only changed it a bit. For the better. Enjoy.
A tasty way to start the morning. Add a few seasonal berries to the plate for color and flavor.
This has 600 cals, Could divide it in half and drink some later in morning also.
This is an Atkins type breakfast. I add bran to give me some fiber and B vitamins. Vegetarian meal, not vegan.
Pre heat oven to 400
spray pan loaf pan with pam or other cooking spray
Mix all dry ingredients in a large bowl
add all wet ingredients to the large dry bowl
Bananas should be mashed or processed in a blender to be smooth
batter may be chuncky if you just slice bananas
pour into loaf pan
This is a shake I mix up to make up for skipping breakfast. Its a little high in calories but gives me plenty of energy at the start of the day and is my biggest meal of the day usually when I drink it
