This sesame tofu and eggplant recipe makes a wonderful light lunch, and is surprisingly vegan. The eggplant is julienned then tossed with a spicy Asian style marinade before it’s cooked down into soft noodles. The tofu slices are crusted with sesame seeds then pan seared and caramelized with soy sauce.
These pancakes are light and fluffy, are just sweet enough that you don't need the syrup and even if you add the syrup, it wont be too much. Fun and easy to make.

This is an amazing banana bread that is totally healthy. If you can't tolerate the oat flour, replace it with millet flour and it tastes just as good! This is a truly healthy recipe using all organic ingredients and you won't feel sick after eating it!!!
I found this recipe in an AARP magazine-it makes a really delicious sandwich and I think it is really healthful and low cost. It also is great served on almost any kind of cracker.
