I am not sure where this recipe originated but it was a real hit with friends and family. You can add cayenne pepper or jalapenos to spice it up a bit. But drain the peppers because the zucchini is moist enough without additional liquid.

Trying to lower the calorie and fat in this wonderful dish, I made it with Greek Yogurt instead of sour cream. The taste is so similar you would not know the difference. Bu the absence fat and calories on the hips will. I also added zucchini as I only had a half of a spaghetti squash. I used a julienne slicer to make it look like the spaghetti. I used the peel and everything and it made a very pleasing dish to look at.
I have been looking for recipes to make our old favorites work in our new Paleo lifestyle. I was never one for crusts on my pumpkin pie but my husband was. I have made this recipe with coconut crust or an almond crust on the bottom. But I found the almonds on the top saved time and didn't miss the crust. We have this for breakfast with celery and almond butter for a great start to the day meal. Love it.
