Great hot breakfast cereal for one. You could also convert this to make a big batch in a slow cooker. The flavor isn't in your face coconut, it is subtle. Combined with the brown sugar flavor of the dates I think it rocks. I did not include salt in the nutritional info as it is optional. If you prefer a more intense coconut flavor, you could increase the amount of coconut milk and decrease the water.
Delicious and healthy for breakfast or dinner, with less fat and calories than the original version! Use whatever veggies are available. Feel free to use vegetarian bacon bits. Great way to get the kids to eat veggies.

Easy to make quiche. Calories can be reduced by using filo pastry instead of the puff pastry and also reducing the fat content in the cream.

This is a great lunch or brunch meal. It is very filling and the crab gives it a hint of sweet to make it oh so savory! You can put other meats like chiken or tuna, but the crab is delicious.

I first made these muffins when on Weight Watchers. I changed the recipe and added the bananas which make them moist and sweet. They keep well in the Frig. A yummy treat for a change in breakfast food.
