These cookies are some of my favorites from childhood. They keep for ages, and are not too bad for you if you don't eat too many! You can add lots of other ingredients to change the flavor - the recipe is pretty much bulletproof. Try it with nuts, chocolate chips, craisins, cinnamon - the possibilities are endless! They also pack and ship beautifully. Yum!
Not a diet food, but a healthier fruit cake than many. The fibre is actually higher than the nutrition information indicates, as fibre content isn't regularly reported on packaging here. I'm sure there's a lot more fibre in the fruit, nuts and flour than the calculator indicates.
You could easily get 40 or more slices from this cake.

This is definitely one of the craziest recipes I have ever tried. Somehow, I got it into my head to make a cake with fresh beets in it. I researched a few recipes, I found one here on Spark Recipes but the quantities seemed wrong, so this is my version. I wanted to make a red velvet cake and the color of the batter after you mix in the beets is indescribably gorgeous. Unfortunately, upon baking the cake, the color fades to a golden color and loses most of it's red. (I add a picture of the bright red batter so you can see how it looks before it bakes). I used a bunch of red food coloring because I really wanted the look of a red velvet cake. Food coloring is optional, of course.
My husband says it is the best cake he has ever tasted. It is rich and moist and dense and you can't taste the beets at all, although they give the cake a distinctive taste. I didn't tell him until after he ate half of it that it had beets in it. He doesn't like beets, but he begs me to make this cake.

You can exchange all the seasoning (incl. onions and egg) for the Croatian seasoning package "FANT za punjenu papriku i sarmu". Look for Fant as well as the "kiseli kupus" (sourkraut heads) in stores with Balkan foods.
I reduced the brown sugar to 1/2 c instead of 3/4, reduced the molasses to 1/4 c instead of 1/2 and ended up with about 78 cookies which are about 3 3/4 in. tall. I used snowmen, angel and tree shapes.

Lightened up a little bit from your typical pound cake, this version still contains a bunch of butter but also had whole grains, low-fat buttermilk, fruit and cholesterol-free egg substitute to balance it out a bit. But just a bit - hey, you only live once!
