One of my favorite side dishes for Thanksgiving and Christmas
We always had some variation of Mexican cakes (or Russian tea cakes or Snowballs) at Christmas so these little cookies have a tendency to brighten moods in my family and friends no matter when they are made. This variation has no nuts and has a orange flavour.
This is a long adored family favorite Christmas cookie! Well worth every calorie and every gram of fat! :-)
Five ingredients (not counting the chocolate) and NO sugar! A xylitol / stevia blend enhances the natural sweetness of the organic coconut and virgin coconut oil.

This recipe originated from my sister who got it from her mother-in-law and has been perfected over the course of 40 years. The only adjustment that I have made is the use of melting chocolates because they are easy to use and more predictable (She uses chocolate chips and parafin)
Use only Jif peanut butter and stick margarine (butter will not work in this recipe) and be sure to melt the margarine for perfect buckeyes every time.
This recipe may be reduce in size. I use a professional 6 qt. KitchenAid mixer
These are not healthy food but a tradition at Christmas. by reducing the amount of sugar and making the balls smaller, you get a treat that is a little less calories that mom's original recipe.

A delicious low calorie cookie recipe that I learned in a high school healthy cooking class.
It makes for excellent Christmas cookies. Other ingredients can be added as well.
Perfect bourbon balls for the holidays! You can easily substitute rum or whiskey for bourbon.
Crush vanilla wafers in plastic bag.
Mix in Rum, Powdered Sugar and corn syrup until the vanilla wafers are moist
Stir in Chocolate chips and chopped pecans (to taste)
Put in refrigerator several hours or overnight to harden. Then roll into balls about the size of a melon ball and lay out on waxed paper. Sift Powdered sugar over top and roll balls around in excess sugar to fully coat.
This recipe came along with a pair of cookie cutters in the shape of angel's wings that you can hang on the rim of your coffee cup.
