Boil up fresh black beans, and mix this batch up ahead of time and store in large quart size jars stored in the frig for the summer days to toss on salads, or throw into mexican plates, wrapes, or just eat as a snack or side dish on a hot summer day. Very refreshing and high energy with good taste along with a dallop of low fat sour cream and corn chips.
Moist and freezable, these are tasty and rich without breaking your waistline. Moist enough added condiments are unnessessary.
this is a very simple recipe. just throw everything in the crock pot for 4 hours and enjoy! You can substitute any kind of meatballs you like. i'm using turkey meatballs to cut down on calories and fat.
Very good with burgers on the grill, or a less healthy version is with Nacho flavored Dorito chips.
1st I don’t measure, so I’m doing my best to provide the recipe for ya (so please season to taste). If you love black-eyed peas, but don't love to eat pork and want to cut back on fat/calories without compromising flavor - this is a great quick recipe. Try adding peppers, stewed tomatoes, other spices or veggies.

This recipe has evolved over the years. The original started from a recipe inspiring me on the internet, but over the years I have adapted it to be healthier version. I've moved from tri-colored pasta to whole wheat pasta and eventually gluten-free pasta. I've tried fat-free Italian and Caesar and found that full-fat Caesar please the crowd better than fat-free Caesar.
This is an offshoot of traditional pea salad, but it's a few days before payday and I want pea salad, so I made do with what's in the house.
My daughter brought home a 15 lb cabbage her third grade class planted, grew, and harvested. It was not the record breaker this year (19 lbs was). I had to get creative with the ingredients around the house, thus this casserole. Plus, I have to eat low-sugar, low-carb for my thyroid, so now I'm in love. I made it for Easter and no one turned up a nose - it was gone! My children and anti-carb husband eat thirds.
In my constant effort to recreate dishes that are good for me but satisfy my naughty cravings, I have recreated the Chicago Hot Dog into a breadless version. Bread always ups calorie content and I'm sensitive to unrefined carbs, so I choose to go breadless whenever possible. The original recipe calls for a more fattening hot dog and cream cheese until a chef chooses lighter options. Here's my lighter options.

This is the Cake I grew up on and have now perfected baking. I must be honest, I can't eat this too often...
We roast our veggies on a charcoal grill. The veggies can also be roasted in the oven, but I have not done this. I chop using a food processor. My SIL in Libya uses a food mill. You need to be able to chop soft veggies to a very fine dice.

I altered some spices for family allergies and used sunflower seeds instead of pumpkin.
These brownies are tender, cake-like, moist and delicious. Use an 8X8 pan or they may be too flat for your liking. The original recipe calls for grade seed oil, which is didn't have on hand. So I used olive oil and they came out very good.
