I have come to love roasted veggies! We eat them at my home 2-3 times a week. It doesn't matter how many veggies we roast, they are always a hit, and they always are gone by the end of dinner. This is an excellent side dish to almost any meal. It is healthy, and you can tailor it by adding vegetables that are in season (grape tomatoes are good, poke a hole in them first). I find that this recipe is great for large groups, because, aside from the prep (a bunch of cutting and chopping), it is easy to make a lot of food with minimal effort. Be creative, and enjoy!
I found an extremely high rated recipe for German Apple cake on Allrecipes.com and adapted it by using applesauce instead of oil, honey instead of sugar and half wheat flour instead of all white.
I liked it, however next time I will either only use 3/4 cup of honey or 1.5 cups of brown sugar instead of the honey. I would also chop the apples smaller than I did in this one.
Other than that a tasty and moist treat that is guilt free none the less.
This is a recipe I found on yumsugar.com, and after making the original recipe and finding that it was way too easy to eat more than one slice in a sitting, I did some substitutions the next time. I used whole wheat flour instead of all-purpose, applesauce instead of oil, and 2.5 cups of sugar instead of 3. The result is something similar to the texture of a bran muffin and 234 calories and 5 grams of fat a slice (whereas the original recipe yields a slice that is 340 calories and 15 grams of fat and is much less filling).
One of my favorite go-to's instead of ice cream. Sometimes I may add mini-chocolate chips for extra crunch or flavor (not in nutrient info).

Summers coming, better start trying out some low calorie Popsicles that I can eat with out feeling guilty! I have this one in the freezer now and will load a picture when it's frozen. It looks pretty good!
Best homemade sherbet. Better than store bought sherbet. Soothes sore throats and nice and creamy taste.
