I have altered the original recipe from Taste of Home to be lower in calories
these are YUMMY I dont need anything on top of them but if you feel the need add some fat free whip cream with some cocoa I am sure would be good! Or you could take some powder sugar with a little water make a paste and drizzle over top of cupcakes
Mixe wet ingredients in one bowl cream.. mix dry in another.. then mix and scoop into T. size mounds on a cookie sheet bake about 12 mins.
Same sweet cinnamon crunchy texture, wrapped around cool, melty Vanilla Ice Cream, drizzled with a kiss of Chocolate, like all those fattening desserts at the GOOD Mexican food resaurants.

This cheater pie is as flexible as can be. It is easily altered to be even lower fat and very low sugar. It's quick to make and requires no cooking or baking. Okay, it's not a real coconut cream (my favorite) but it will do in a pinch.
