I found this recipe while I was in middle school many years ago. I truly fell in love with these before ever eating a regular snickerdoodle.

Less than 200 calories per serving, and can be even better if you use low-fat or non-fat dairy products. Try switching up the pudding flavors to get a different dessert each time you make it!
Healthy- fibrous dessert, snack, or side dish- packed with vitamins and good for children and diabetics- good source of potassium.
adapted f/ Simply in Season Cookbook. A rich cake--great for special occasions. Please note that this recipe makes 16 servings--this is a very rich cake, so a small slice is totally satisfying (I've even cut it into 24 servings before with no complaints). It's a rich, satisfying dessert despite it's simplicity (or maybe because it's so simple!). Of course, the ganache filling can be skipped, if you prefer another. I generally frost the cake with a simple cream cheese frosting (recipe not included). Depending on how thick you make the filling layer, you may have extra ganache, which can either be drizzled over the cake OR you can let it chill till almost hard, roll it into balls, roll in cocoa powder, and viola! you have truffles.
Better than cupcakes but just as cute! This is an adaptation of the Pumpkin Muffins recipe that is also super tasty!
Vegan, no eggs, no milk. From the Book "500 cakes"
The image has stripes of chocolate on top that are not included in the recipe or nutrition info.(I plan on taking it off of my piece)
