I found this recipe on Eat Better America, but after making it I thought it needed some beans. I added no fat refried beans, but you could also add black beans. This also can be made with precooked chicken.
Leftover cooked chicken is great for this. Substitute homemade flour tortillas if desired. These are very rich. I recommend a simple salad of shredded lettuce, tomatoes, corn, jalapenos and salsa topped with a dollop of plain yogurt on the side. Follow with coconut macaroons for desert.
VERY easy recipe to make on busy weeknight! Serve steamed frozen corn and cornbread with it for a complete meal.
