This is a great summer meal. You can subsitute any type of seafood you would like. We normaly serve with a slice of grilled pineapple.

**One minor alteration...I used far less extra virgin olive oil to cut down on the fat. You may choose to use more if desired.
You can basically add anything to mac and cheese and make it a cassarole. My dad was famous for this one, and it's an insanely easy addition. Adjust however you want!

I have had many a tuna patty growing up, and this is by far the best I have ever tasted. Your kids will love this, and you'll love that they're eating hidden veggies! The cost to make these are amazingly cheap, and you won't feel guilty eating it either.
