Here I go again, making dishes that taste so sinful, but are not... My family loves these dishes, they don't even realize they are eating healthy!! This alfredo dish is really good, you have got to try it!!
I found this recipe in Women's Day Magazine while waiting to get my car fixed. The original recipe called for Pine Nuts as well but I took them out and it reduced the calories per serving by a lot.
Full of flavor and so satisfying for something that has the same calories as a lean cuisine! Inspiration from a meal I had at Bahama Breeze that totally won me over! I eat this at least twice a week.

Rachel Ray's Pasta Puttanesca recipe. Just like I had at a fancy Italian restaurant I went to last month! :o) Can make it a meal by adding grilled chicken breast. Nutritional count does not include added chicken or cheese garnish.
Delicious tuna salad kicked up a notch with famous Maryland Old Bay Seasoning.
Note: If your watching your sodium intake, you may want to reduce the Old Bay or omit it completely and use fresh ground pepper.
Eggplant and salt cod is one of my favoirite meals that I load up with lots of onions, bell peppers and tomatoes. If I don't have tomatoes, I'll do with out.
I usually serve with either, plain polenta (harina de maiz or funche), boiled Carribean root vegetables, like green bananas, taro root, mountain yam, pumpkin (calabaza), breadfruit, malanga and, tanier to name a few.
