Much like Banana Bread. You can substitute for whole grain flour, or stevia/raw sugar, etc. This is the original recipe my mom makes. I play with it from time to time. It's really delicious and moist.

I found this in a Taste of Home magazine and used turkey sausage and less brown sugar. It's really tasty! I think some sliced potatoes would be good with it, too. (not in the nutritional info)

I modified the recipe for some yummy cookies someone made us from Germany. Switching the cereal to Kashi and adding a bit of protien powder brings each cookie in at 104 calories and 3 grams of protien. I nice treat!
