Heat over 350
Measure 1/4 c coconut oil and put in refrigerator to harden.
In a medium bowl, fluff all dry ingredients together. If oil has set, dig out of it's cup and, with a fork, cut the oil into the dry ingredients. As you would cut in fat when making a pie crust. Mash up cooked sweet potato until all flour is completely incorporated and then add at least 1/2 c coconut milk. Let sit for a few minutes if necessary for coconut flour to absorb the milk.

These are yummy, authentic Mexican style steak tacos that are surprisingly diet friendly and extremely easy to make. I calculated the nutrition for 3 servings of 3 tacos each, but if you want, you could make four tacos per serving (with less meat per taco) for 45 extra calories. The prep time is practically nothing, although the cooking time to get the beef fall-apart tender is about 2 hours. Alternatively, you could go the slow cooker method (setting everything up in the morning on low) and have for dinner that evening. Enjoy!
This is basic cornbread recipe without any yeast. The recipe was inspired by the yeast-free kitchen cookbook's cornbread recipe but it is different. In my family we have always eaten unsweetened or savory cornbread. I doubled the recipe from the yeast-free kitchen book and substituted half the cornmeal for mas. You can substitute cornmeal if masa isn't available where you live. In Texas you can get it anywhere but I understand that the rest of the country doesn't have the Mexican population that Texas does.
Use a ready made salsa to speed things up. Broccoli is a favoriate accomaniment with nice fresh bread for us with this meal.
I love this Salad for BBQ or Potlucks. We'll also use it with a Chicken breast to replace dinner. Great flavours.

As easy as it is to make vegan gravy, it’s just as easy to make gluten-free gravy–and they taste equally delicious! Although one of the main ingredients of gravy–wheat flour–is not suitable for gluten-free folks, substitutes are easy to come by. While I use chickpea flour (available in the bulk or pre-packaged section of your local natural foods co-op), you could substitute the Red Mill all-purpose gluten-free flour or rice flour. Chickpea flour thickens better than the other two, but any kind of gluten-free flour would probably work.
