A healthy and simple Indian style curry that can be eaten with rice or on its own
It's a famous Indian appetizer where pieces of paneer (Indian cottages cheese) and marinated with yogurt and spices and then grilled until charred. Onion, bell peppers and tomatoes are also added to the marination along with paneer.
I was wanting to make a curry or dal.. as I've never tried either. Instead I came up with this using ingredients I had.
I had a lovely curried rice dish in a thai restaurant a few weeks ago. I thought I'd make a healthier version. Enjoy!
This is a VERY hearty curry-esque dish, great for rainy and snowy days. Make sure you have small bowls, because you'll be tempted to get seconds. :)

ail.asp?recipe=1226514) that I adapted to fit what I had on hand in my pantry when I was snowed in.
Lentils and chicken in a garam masala coconut curry sauce. Add carrots and spinach, if desired (not in calculation). Serve over rice, with naan, or over half a baked sweet potato. You could also substitute cubed sweet potato or cauliflower for the chicken to make it vegan.
This is adapted from the Food Network show "Aarti Party" but made in a calorie-saving way. It sounds a little 'different' but tastes fabulous and everyone in the house will enjoy it!
This combination may sound disgusting, but it is not. The cranberry juice and the buttermilk combine to make a thick tangy sweet drink that gives you a full feeling and an excellent pick-up with a very good nutritional footprint.

A combination of 3 recipes. Playing around with different amounts of spices & veggies created this very good curry. I have to make a double plus batch for any leftovers!
