Leek and Potatoe soup (Julia Child)
5 leeks and 5 potatoes and 8(approx) cups water. yields 12 cups of soup which is 6 servings of 2 cups each. I finish the soup with fresh herbs and either laughing cow light cream cheese, or butter, or sour cream, or creme freche. Whatever tickles your fancy. The finishing ingrediants are not included in the calorie count. Note the serving size is two cups.
