I usually make a lot of it to get me through the week. Simply cut a piece out and heat it up every morning for a hearty alternative to the bagel cart.
Add some fruit, nuts, crunchies, etc. on top to make life more interesting.

This is a low carb adaptation of my normal veggie meatloaf recipe (this has close to 7g total carbs per slice). I just used broccoli (instead of potatoes, corn, peas and carrots) and almond meal/flour (instead of 2-4 cups cubed bread soaked in 3/4cup evaporated milk). My hubby and kids (7+2 yrs old) like it! Score!
