My daughter is a pastry chef and I am a home cook and we have collaborated on trying to create a cookbook that addresses special needs. We both love Black Forest cake and we wanted to create a muffin that was different than anything already out there. We hit upon filling chocolate muffins with preserves. We also use cherry juice instead of water. This recipe is lower in fat because we use unsweetened apple sauce instead of oil. It took several trials before we got it right and we hope you enjoy the results.

This is a revision of SGASKILL's Meatloaf Muffin recipie. I've switched out the bread crumbs for parmesan cheese and regular brown sugar for Splenda brown sugar blend. It cuts the carbs, but adds a bit more fat & calories.

I was trying to find a substitute for Trader Joe's Spicy Feta Dip because my family will no longer buy it because it contains canola oil. This is not as thick and clumpy due to the fact I put it in the blender. I'll try to give the closest measurements I can because I made it by just throwing things into the blender.

preheat oven to 350.spray 13x9 inch baking dish with nonstick cooking spray.set aside. cut chicken into 1 inch pieces set aside.2. combine broccoli and carrots in 1 quart microwavable dish. cover and microwave at high 2 to 3 minites or until vegetables are crisp tender set aside. 3. combine soup milk in small saucepan over medium heat. cook and stir 5 minutes. stir in cheese,chicken,broccili and carrots. cook 2 minutes until cheese melts remove from heat. 4. spoon 1/4 cup chicken mixture into each tortilla. roll up and place seam side down in prepared baking dish. bake uncovered 20 minutes or until heated through.
