I love this recipe after a workout....Substantial enough to hold you over for awhile and sweet enough to satisfy a sweet tooth..Can be eaten as snack, breakfast or dessert.
I adapted my Harvest Vegetable & Casserole to fit the South Beach Diet Phase 1 guidelines. Also I try to eat "clean" so substitute homemade/grown ingredients whenever I can. This can also be cooked in a slow cooker.
Zucchini, 2 cup, sliced (remove)
Mushrooms, fresh, 1 cup, pieces or slices (remove)
Garlic powder, 1 tbsp (remove)
Water, tap, 1 cup (8 fl oz) (remove)
Modified from the South Beach Diet shrimp recipe. The seasonings are to your taste, but I have found that about 1 tablespoon of the parsley and oregano work nicely. You can also use white white instead of vinegar. Some people have suggest using a little bit of chicken broth, but that is optional (1/4 cup if you do). I serve this over a bed of fresh spinach with a nice wheat roll, or just over rice. The servings are for 4, but you can alter it.
If you don't like the normal consistency of spinach give this recipe a try. Full of flavor and a great way to get more veggies in your diet!
Grandma's recipe. Half whole wheat and half white flour. Makes two loaf pans, about 10 slices per loaf.
