Atkins Induction friendly, my version of Low carb! Spinach as posted by SLOWSET, using fresh rather than frozen spinach. The spinach is already net carbs - so do not subtract the fibre from the carb total if doing atkins - whole recipe is about 4.5 net carbs.
This is a filling lunch and a great use of leftover brown rice. It's a little bit high in fat, but pair with fruit for a balanced meal. Use whatever veggies you have on hand, and all measurements are approximate, but this is a good mix. Use about 2/3-1c. of vegetables for a healthy lunch!

1 med. zucchini, shredded (1 cup)
1 8 1/2-oz. pkg. corn muffin mix
1 c shreeded cheddar cheese (4 oz)
1/4 c milk
1 egg
1/4 tsp. cayenne pepper
12-0z mushrooms, quartered (4 1/2 c)
1 c drained bottled roasted red sweet peppers

This vegetarian sandwich is tremendously versatile; if you don't have eggplant, simply substitute long slices of zucchini or try using some sauteed mushrooms or carmelized onions. It's also divine if you substitute sundried pesto or tapenade for the basil pesto.
High protein, low fat delicious lunch. Can be served on crackers, rice cakes or toast.
