A quick and easy variation on the traditional egg salad. Recipe is wonderful for those who can't eat eggs like me. Recipe is basic and nothing special, which allows for creativity!
Lunch Time! Protein, Carbs, some veggies added to make it feel more 'healthy' and to add more flavour. Great way to add weight.
I just threw together some things that were lying around in the kitchen:
shredded carrots
three stalks of parsnips
three small yellow onions
grapeseed oil
salt
soy sauce
leftover rice
and some eggs for a bit more protein!
This is a quick and easy lunch with the added bonus of a portion left for tomorrow's lunch.
this lebanese recipe would traditionaly be made with chopped fennel leaves but since it was unavailable, I just used dill:) anyway it turned out good...enjoy
my version of a middle eastern dish, it's traditionaly made with lamb meat, best served with rice.
