Miniature open faced sandwiches using one reduced fat Triscuit as the base. This is one of my favorite meals for lunch.
Cut tempeh into 1 inch cubes and brown with olive oil and cilantro. Chop celery into small pieces, then combine with tuna, mayonnaise and horseradish sauce in a bowl. Add ground black pepper to taste. When tempeh is browned, let it cool and add it to tuna salad.
