A simple salad to make with summer's bountiful veggies. Just chop up your favorites, season them, throw in a can of albacore tune (in water) marinade over night, and bring to work. easy lunch on the go. You can prepare it in the time it takes you to watch a 10 minute news reel.
You could eat just half of this instead and add in some whole grain crackers or pretzels as a side.
Great for left over pasta and chicken - toss in some frozen veggies and salsa and voila
My grandmother made this for us when I was a child....I changed it to whole wheat pasta instead of white pasta and I use low fat soup instead of fat.....still brings back those childhood memories......
Mama used to make this simple quick meal. I just add a little cucumber to it. This can be served warm and fresh or chilled to serve cold later. (Note: Due to the mayonnaise this is not something I would leave out or consider serving at a picnic..) I portion this out into four containers that weigh an equal amount, so I'm not sure of the exact weight or measurement of each serving.
I had seen some vegan patty recipes on the web and adapted this one. It is pretty balanced with fat/carbs/protein. I love to eat one of these with a salad after working out. They keep well in the fridge and re-heat well too. Delicious on a bun with vegenaise and trimmings.
