I thought of this the other day and absolutely love it. You can change up what kind of sauce you put on it, for Mexican, use salsa, for Italian, use tomato sauce, etc. I used the pan with two ovals to cook the eggs. Oh yeah, and I LOVE these tortillas, they are so satisfying and tasty!
This is my version of a chorizo chili I found online. Just a warning, the calories and fat are pretty high. But it sure is tasty!

There are many ways to make this. you can use your favorite cheese, canned or fresh tomatoes. you can use the old el paso seasoning but the taco bell is better with the added chilli pepper and cumin. i have used buffalo meat in this recipe as well.
