I wanted "Taco King" type nachos bad, and I figured I should try to do it as healthy as possible! So here's great nacho taste, and only 4g of fat. Eat it as a meal, because it WILL fill you up!
This is a very filling low carb breakfast, lunch or dinner. Be sure to drain as much fat off of the chorizo or it'll be a bit rich. Feel free to substitute different cheeses or add more onion or peppers. 2.1 net carbs per serving
Those packets of taco seasoning ARE convenient, but they're so high in sodium, plus they normally contain MSG. I figured out a way to make ground meat taste awesome for tacos without those additives.
This is perfect if you LOVE cilantro. You can, instead of using the little bit of dry cilantro, go ahead and use a full 1/4 cup of raw cilantro, rinsed and chopped. I just didn't HAVE enough raw when I made the soup.

Serve with Iceberg lettuce wedges, Fat-Free 1000 Isle dressing and Baked Tostitos Scoops for a complete meal. You can also substitue Fat-free flour or corn tortillas, I just used what I already had in my pantry.
Fresh cilantro is awesome with spicy flavors of Mexican, Caribbean and Asian cuisines. Keep fresh cilantro refrigerated; place the stems in a glass of water and enclose it in a plastic bag. Turn this recipe into a vegetarian main course or hearty side dish by omitting the chicken.
