My combo of pico de gallo & a small avocado.I use it as a sandwich spread instead of mayo. Also can be used a low-fat dip.
This is a Pampered Chef recipe that can be cooked in the microwave for 10-12 minutes or in the oven at 350 for 40ish minutes.
Added more vegetable with whole yellow or red pepper and lettuce. Increased spice with cumin and changed cheese for flavor to a monterey Jack and melting abiltiy.

Delicious, savory vegetarian nachos with a rich spiciness, along with good fiber and protein. A little more calorific than most things I eat, but very, very nice. Fat and calories could be reduced with lowfat cheese.
