This is the lower cal/lower fat version, and I'm happy to say it taste just the same!!!
It's not extremely low fat, but to me it's one of those comfort foods, that just taste good. This is the dish that all my friends always want me to make!
This chicken is fabulous!! It can be used in so many ways! Breakfast, as part of a breakfast burrito, as part of a stuffed tomato, over some rice, in a tortilla....or just by itself, the way i prefer!
The tequila is optional, the alcohol cooks out, and the flavor is minimal. You can also spice it up by adding jalapenos if you like.
This recipe was found on www.eatbetteramerica.com and I modified it a bit. I used lower fat cheese, rotel instead of green chilis and tomatoes and added a can of corn for extra fiber.
Easy layered enchiladas. My family really likes the blend of soups and enchilada sauce, and layering it rather than wrapping each individually makes this an easy to prepare meal.

The info is just for the filling--- It can stuff about 17 Large Jalapenos with 30 g of filling in each.... So just add to the info for the peppers

These are so good!! I wasnt sure i would like them but wanted to try something new for dinner!! We made with Yellow Peppers and it gave them a great taste! Serve with a nice green salad for a very light fulfilling meal!
