Found this in the costco mag - adjusted to my tastes, if you cut the olive oil down you save lots of calories, it's not totally needed.
Recently i replaced the garlic with 1-2 tsp garlic salt and 1-2 tsp seasoning salt, and updated recipe to be 2 tbl olive oil vs the 1/4 cup!
Use my peanut sauce recipe. Makes more than is needed for 1 pound of shrimp, hence the 2 recipes
found this in cooking light, i limited the oil, changed out shallots for green onions, and used less shrimp to get more sauce!
adapted from CL, exchange chili garlic for red pepper flakes, add veggies as desired, i added a fresh jalapeno
addapted from BA, didn't have cod, but have tons of tilapia in the freezer
When I am on the road, eating well is always a challenge. I wanted something I could take and eat in the car with minimal fuss and maximum nutrition - it's hard to eat salad while driving! I played around with Linda Sue's tuna casserole recipe (totally yummy!) and came up with a veggie & protein-stuffed delicious meal in a muffin. If you prefer not to use a microwave, cook the fish on a plate over a pan of simmering water. Any smoked fish is delicious in this dish, including trout, smoked or hot-smoked salmon, and cod.

These are great by themselves, but are also quite tasty as a sandwich on bun with veggies.
This is great in a Pita for lunch or with crackers for a high protein, high fiber snack - soundswierd but is very yummy and filling!
This is a wonderful recipe if you like salmon. We had always just grilled or baked it with lemon pepper or ordinary salmon seasoning. This is a great alternative that is easy and satisfies the sweet tooth.
