I choose to use whole wheat penne pasta for this recipe, but you can also use linguine or any pasta you prefer. This is based off of an Ellie Krieger recipe but I added less pasta and parsley, more garlic, and decreased the serving size to 2 to increase the amount of shrimp and veggies per serving.

Simple stir fry, with lots of veggies! Sliced chicken can be used in place of shrimp. I serve this with my homemade sesame soy dressing (see recipe) yum!
