Backpackers that prefer our own gourmet creations rather than those instant, factory bagged meals available in the stores . . . so before a trip, we're preparing our favorite dishes to dehydrate. Lightweight once dried, we package in zip lock baggies and we're good to go. When dinner time rolls around at camp, we simply bring water to a boil, add our dehydrated food, rehydrate . . . and enjoy.
Creamed tuna is a budget meal, and can be served over rice or noodles. Top with shredded cheddar, cooked peas, chopped hard-boiled egg, or sprinkle with hot sauce.

The high fat count is from the oil in the fish, you could use tuna canned in water but it doesn't seem to have the same smooth texture.
Found this recipe and tweeked it a bit. It makes 8 servings but you always just make the sauce and use half. Also, the other recipe calls for 2 tablespoons of lemon juice that you can add for about 7 calories and 2 carbs. Enjoy!
