This is a combination of a couple of different recipes that I have found on Spark People. I only used 7 oz of shrimp however you can add more to your liking. I have also prepared this and added Asparagus. This recipe is also good with chicken.
Preheat oven to 350 degrees F. Lightly grease a 1.5 quart casserole (with lid).
In a saucepan, combine cod and milk. Cover and simmer until fish flakes easily. Drain reserving liquid. Flake cod into prepared casserole.
In a saucepan, melt 1/4 cup butter or margarine. Blend in a mixture of 1/4 cup flour, pinch of basil, pinch of pepper.
Sprinkle over cod: 1 cup grated cheddar cheese, 1 tsp dried parsley flakes. Pour hot sauce over top and bake in preheated oven for 15-20 minutes, or until heated through. Makes 3-4 servings.
This is one of my favorites, but it is a bit garlicky, so adjust the garlic according to your taste. I like this on a bed of sauteed fresh spinach, with more garlic - if you dare. I've also made this with salmon or thinly pounded chicken breast instead of tilapia.
