This is an easy to make, low fat, low carb soup. You can easily make it spicier by adding old bay seasoning

My mom used to make tuna salad during Lent and this is my own version of it; I decreased the mayo and added some vegetables to make it healthier. To increase protein/fiber, you could also add a can of black beans, drained. I like to have it on toast or a pita.
I whipped this up for lunch one day and really liked it. You can add a bit of Old Bay seasoning to the shrimp as it cooks for a nice flavor. Top with a sprinkling of parm. cheese if you like

This is a recipe my mother-in-law makes that I have tried to replicate without the actual recipe itself. My family loves it and it is incredeibly healthy! I make it for family functions and it is the first thing gone. You can add anything you want to it. Just experiment and enjoy!!
