These are very simple to popovers, and puff up initially then fall to have a very light and flaky crust! Great for breakfast, lunch or dinner! Cool and freeze, pop in the microwave for one minute to reheat (for use within two weeks.)
This is a low sodium, low fat, high protein entree. Best served with salad greens. The directions include my own taco mix which reduces the amount of sodium in the recipe. If you are crunched for time or don't have a spice rack, just buy packaged taco mix. I don't like things hot, so IF YOU LIKE IT HOT, add your favorite reduced sodium SALSA!!

Love Chipotle food? I modeled this recipe off my favorite burrito bowl from Chipotle (Less rice, more bean, all four salsas and guac.) The recipe sounds complex because there are lots of parts, but it is pretty easy to throw together in 20 minutes. Great for larger groups, too.
Very simple and healthy chili recipe to make. Just throw all ingredients together and cook for one hour. You can adjust the amount of jalapenos and chili powder to make it more spicy if you would like.
In my version of lasagna I've substituted Chicken sausage, which is lower in fat and calories, for the Italian sausage. Really yummy! I buy this sausage at Sam's club. You may also be able to find at your local butcher/meat dept.
You can cook the sauce as long as you like to distribute the seasonings and flavor. But my family usually can't wait for me to cook it down all day, so my version has less water and cooks up fast! If you choose to cook your sauce longer, you may need to add additional water.
