This can be made with any veggis and if you eat meat and cheese it can be added for a filling summer meal
The Basic recipe is our favorite summer picnic or BBQ dish when fresh white corn is plentiful, but I have the alternate ingredients in my pantry year round. It can be served either as a salsa with tortilla chips or as a side dish.

Combine raisins, peanut butter and grated carrots and mix together in small bowl. Spread mixture on two slices of whole wheat bread to make a sandwich. High fiber, high protein, low sugar. Enjoy!

A Classical Irish Soda Bread from Bread Book by Susan Wright. The first quickbread I remember making entirely solo.
In a medium saucepan cook mushrooms in hot olive oil till tender. Carefully add water to saucepan, Stir in parsley, basil, salt, oregano, and pepper. Bring to boiling; remove from heat. Stir in couscous and cover. Let stand, covered, for 5 minutes. Stir in chopped tomato and serve immediately.
Makes 4 servings.
