A SUPER LOW carb version of my mom's favorite chicken salad recipe!
For those of you who have to watch both cholesterol and fat AND have extremely busy lives (who of us don't?), this recipe is is for you.
My husband was craving fruit so I threw this combination of fruit together to make a good, sugar-free, colorful salad. All the fruit was fresh except the pineapples. I used both green and red seedless grapes to give it a little more color.
I eat this poured over fresh spinach, or blanched chard/collard greens...yum! Greens are not calculated in the calories
my boss makes this every holiday season, and it's wonderful, if a little heavy on the dressing. I put this in to figure out how many calories I was eating...If you have a better version, I'd love to know. I'm sure there are spices, but I can't tell what they are. Enjoy!

The crunch of the apple and bite of the onion make this chicken salad stand out. I put 1 cup of the mixture in the 1-cup oval Fit & Fresh containers & fill the large divided Fit & Fresh container with 3 cups of mixed salad greens, purple cabbage & carrots for lunch. I get a full rainbow of veggies in a healthy yummy meal.
This is a variation on a recipe I found on another website using ingredients I happened to have in the house. Great with some crusty french bread or a bowl of soup. Probably would be good with some avocado too!
