I wanted something new to go with our lentil soup for supper and this recipe caught my attention in the quarterly book put out by a regional grocery store. I didn't have enough white flour to make their version, nor did I actually have a bottle of lager in the house, so I modified it to meet what I had. It came out lighter in the long run too!
combine earth balance with flour and then mix in water. Form 12 balls and let rest under plastic wrap. Roll out into 7" discs and cook for 30-45 seconds per side on a med high iron skillet.
I threw this together by pure experimentation and the fact that I was out of bottled lemon juice. Now I only make lemonade this way, even better with a little pulp from the lemon.
I'm not so sure that the nutritional info is correct, but I know this recipe is much healthier then if it were made with mayo and sour cream.
