This is a modified version of dietitician Ellie Krieger. Orig. recipe uses 2/3 c. of each individual rice, 1 orange. The salad dressing uses 1/4 t. of salt and honey. I omitted the salt and used agave nectar instead of honey.
Dice mozzarella and tomato, add chopped basil, chopped onion, salt. Let it cool in the fridge for about 2 hours. Buon appetito!
