My husband had this at a local restaurant, so we came home and veganized it for the whole fam.
Saute one diced onion in the bottom of a pot with 1 tsp vegan margarine, and a splash of red wine.
When the onions are clear, add 1 can puree pumpkin (NOT pumpkin pie in a can!), 1.5 c vegetable broth, 3 c soy milk, and 1tsp each black pepper, sea salt, cinammon, sugar, ground ginger, ground cloves.
I like a little more fresh ground black pepper on top when I serve it.
We eat chunky soups for lunch almost daily. With the addition of beans, the soups become even healthier!
Cook chopped onions & garlic in olive oil or canola spray. Steam Broccoli. Combine cooked onions broccoli and all other ingredients in blender, blend well. Heat 1 cup servings in microwavable mugs.
This soup is great plain or garnished with tortilla chips, sour cream, avocado, cheese, etc...
This recipe is quick and easy. It is both vegetarian and vegan. If you have access to "no chicken/chicken broth this is what I use all the time. You could also use Thai broth or chicken broth.
I first made this soup when I was trying to loose weight, but it's good enough to eat even when your not on a diet.

Vegetable soup that kids will like because of the macaroni. You can also add cooked roast to this if prefer meat in your soups. I like it both ways.
