This is a delicious one-pot meal that can be prepared in advance and reheats well. You can dress ut up with extra saffron, arborio rice and homemade chicken broth, or by adding clams or mussels.

My latin mom makes this recipe all the time and it's so delicious! We prefer to pour it over rice and mix it all up. It's really good as a soup too. It's quick and easy with no need to soak beans overnight. For an added kick, add some hot sauce or peppers to your liking.
This is a single skillet dish. I called it Spanish Chicken because we serve with Spanish Rice. I understand if someone objects!
