This was originally a recipe from a Company's Coming cookbook that I altered. I used ww flour instead of white, reduced the oil from 1/3 to 1/4 cup, and ommited the salt. I also omited the sugar and added an apple and banana to help sweeten the muffins. I also added pumpkin and carrot for moisture and texture. So my version is lower in fat and sodium, higher in fiber and sugar free!!
