Adapted from Baking Bites. Crumpets are best served toasted and spread with butter, honey or jam for breakfast. They also make a healthy sandwich and are always able to be at hand since they freeze so easily! This is also a great way to avoid sourdough starter waste when you don't want a loaf of bread.
I took the typical traditional recipe and made it faster, easier, and taste much better. My kids LOVE it and beg me to make it often! Everyone who has ever tried it absolutely loved it! Yummy! Good for lunch or hearty enough for a satisfying dinner with a salad.
Oh So Yummy! These vegan burgers are very tastey and easy to make... as well as being cost savvy.
We Love this meal and find it very filling. We like to have this as our main dish with a side of curry soup. We serve fresh bread with this. Spicy could be altered.
A Mexican-style torta is just like a burrito, except the “wrapper” is a hollowed-out roll instead of a tortilla. Here it’s filled with spicy mashed black beans and a quick guacamole. Take this vegetarian version to another level (and add calcium) by melting Monterey or Pepper Jack cheese onto the bean side of the sandwich. Serve with: Mexican corn or Spanish rice if you prefer. I adapted this recipe from EatingWell.com. You can use cooked shredded chicken breast in place of the beans if you prefer!
No eggs? No problem. A great way to get healthy fat from coconut and so easy to make. Will please anyone who likes coconut; not just health foodies! You can absolutely use stevia instead of or in addition to the agave nectar.
Creamy, comforting, and bursting with fall flavors, this super-healthy "risotto" made from protein-rich quinoa will wow any crowd.
I didn't figure tortillas into the calorie count, so that you can choose whether to use corn, flour, or whole wheat. This is from the book "Lean, Luscious and Meatless," but I used lime juice instead of orange juice, as the authors suggested.
