A twist on the well-known shredded carrot salad. No mayo, and these carrots are cooked.
put all ingred except oil in food processor. pulse till well mixed. Broil in hot oven on cookie sheets (use a couple T olive oil per cookie sheet). Flip carefully, broil till edges are browned.
Whatever I have on hand usually goes into this.
If you use a sweet potato, you will want to soak it for at least half an hour in water, to speed cooking time.

This is a "veganized" version of a recipe for muffins I found in a Better Homes and Gardens cookbook. The nutritional info does not include any add-ins, though I will usually add chocolate chips, raisins or fresh blueberries depending on what the kids are in the mood for.

I tried to find a low-sodium black bean soup that was really easy and I couldn't find a recipe... so I made this! It doesn't have a lot of complexity of flavors but it's 100 calories, 10g protein, less than 200mg sodium, and 16.5g fiber per serving! If you want to add flavor, you could saute the onions and garlic in a little oil before adding them along with the rest of the veggies etc in step 2. You could also add a little vinegar for bite without salt.
Used Trader Joe's Harvest Grain Blend, added frozen spinach, chopped onion and parsley with some aromatic herbs.
Made with Tofu; no eggs. Very rich and chocolatey. No one will know....
