Make this versatile dish with leftover rice and any vegetable in your crisper. (Brown is better, but I've used white rice from last night's takeout.)
For a quick, low calorie meal, try these! They are filling and fulfilling. I chop up the veggies on Sunday (or Monday a.m.) for the week.
My Gramma Willie taught me how to make this sauce years ago. It's the only way I make Alfredo now (though I use unsweetened soy milk instead of skim milk). Serve with grilled chicken, broccoli and pasta.
My hubby isn't a breakfast guy, but he will gladly consume a smoothie every morning. The secret is the frozen banana! Otherwise, I mix it up every day and simply follow the basic formula of one cup fresh fruit + 1/2 c. frozen fruit and 1/2 frozen banana + 1/2 c. liquid. The liquid can be fruit juice or milk or even yogurt. When that bunch of bananas on your counter is starting to look sad, peel 'em, break in half and stick in the freezer so the secret ingredient is always on hand!
A super tasty vegan alternative to chicken, egg or tuna salad. There are endless combinations to this salad. I like to serve it in pitas or tortillas with spinach and peppers, but you can alter this recipe to suit your needs. I used vegenaise, but you can use any other suitable mayo substitute such as nayonaise or even a non-vegan mayo.
This is a recipe my husband likes to make. I'm not sure where he came up with it, but it's pretty darn tasty!
This is the first recipe I tried from Kalyn's Kitchen- and it is amazing! you can look at her blog to see pictures and a better description.
Cook's Illustrated Serve with Basmati Rice Pilaf (see related recipe), passing yogurt and at least one type of chutney or relish at the table, (see related recipes and tastings).
This is a yummy salad that is very flexible. Try subbing olive oil/balsamic vinegar as a dressing. Remember avocados are a little bit higher in the mono saturated (healthier) fats but also a great source of fiber! On the 2nd round of this salad, I tried adding dill and some rinsed, canned chicken. That was also good. Enjoy :)

I love egg salad, so I decided I would make one lower in fat & Cholosteral
If you love Minestrone, you will love this recipe!! In my opinion this is better than Olive Garden's Minestrone soup. I love that you can make it as thick or thin as you want. Try adding some red wine for a more authentic flavor. I left the wine out in order to shave calories.
Five Forks Up from DH! Sorry - they got gobbled up so fast I never got to take a photo.... I served these with sprouted grain toast. Not bacon or not sausage would make an excellent addition to this meal. Based on fatfreevegan recipe
Use this whole-wheat and cornmeal crust to make my delicious Mexican pizza.
A decent and fast Oatmeal substitute for Phase 1 of South Beach Diet and beyond. Smells great cooking. You could even make this at work or about anywhere with a microwave.
Just a plain, cheap way to cook pinto beans. You can also use dry black beans or dry kidney beans, if you like.
