A simple, delicious pasta that uses the absorption method (similar to risotto). The starch on the pasta makes a wonderfully creamy sauce. This can be make as directed, or left on the stove a bit longer to carmelize.
Extremely filling and they freeze well too. Use vegan ingredients if you prefer. These are good plain or served on hamburger buns.
Vegetables may be substitued or eliminated on your taste. Do not overcook vegetables you want them a little crisp! Ginger and Garlic are added for additional flavor, either or both may be omitted.

This is a veggie/vegan burrito. The original recipe called for using a whole pound of vegan cheese, but i cut that in half. if you use more than 1/4 cup of cheese on each burrito, then you will need to adjust for the calories. With using the whole pound of cheese, each burrito would be about 601 calories.
This is a much healthier alternative to regular meatballs. They're also pretty delicious. They taste great with spaghetti and sauce. I prefer to serve them with Trader Joe's Organic Whole Wheat Spaghetti and Trader Joe's Garlic Marinara Sauce. Sometimes the mix can become a little squishy and so we just use it as "meat sauce" instead of rolling into balls. If you wait long enough for moisture to evaporate, making balls should not be an issue. As meatballs they are even better the next day. This quick meal is a proven kid-pleaser, especially with the little ones. While this makes enough for six, expect requests for seconds! Because it's got the pasta and beans, it's a great low-cal, low-fat complete meal. Add a salad and you're set.
If you are in a hurry, you can just use canned beans and increase the vegetable broth to 6 cups. The cannellini beans can be made the day before, stored in their broth and used when you make your soup. This is how this becomes a "quick" minestrone.
In the winter/spring I use frozen green beans and canned tomatoes from my summer garden and fresh chard which grows like a blessing all year round. In the summer, in goes the ubiquitous zucchini. This quick minestrone has about 7 servings of veggies in each bowl!
