I have a very different variant with chicken which is good, too. This recipe is more directly related to one in a food & wine cookbook but has been heavily adapted. Originally I just used olive oil spray but as my family has increased our calorie intake, I've added modest fats back into our diet. This recipe works with olive oil spray.
Filling soup with lentils, sauteed onions, carrots, celery and garlic with Italian seasoning. Adding chopped spinach and vinegar at the end is the key. A hearty vegetarian entree if you substitue vegetable broth for the chicken broth. Really good the 2nd day!
Cool, refreshing, decidedly healthful, absolutely DELICIOUS, this is my favorite drink. I despise coffee, and I find this gives just enough caffeine in the morning to gently wake me without giving me jitters. Sometimes I don't fee like actually eating in the morning and this is what I grab on my way out.

Matcha is ground green tea leaves native to Japan, used in tea ceremonies there. You know the health benefits of green tea everyone has been raving about? 1 tsp of matcha is as beneficial as up to 6 tsp of brewed green tea leaves because you actually eat matcha powder instead of tossing it away after brewing.
Get yourself a decent matcha powder. Check your local asian supermarkets. Find a container sealed with a vacuum/nitrogen lock. Make sure it is grown in Uji for best quality. "Thin" Matcha is fine for this drink and other recipes.

i figured out that I am NOT eating enought protein. I was watching Big Daddys House and he made a similar omelet. I meant to use only one whole egg but sometimes eggs do not cooperate when you try to seperate them! ::-(

I made the sauce from scratch but you could just buy a jar of honey garlic sauce and use as much as you want. I just used a whole bunch of vegetables that I had in the fridge that needed to get used, so your veggies can vary with this.
I usually hate frozen spinach, but this was amazing! Tried it with nonfat cottage cheese and eggbeaters. Still good!
